Ingredients

  • 2 T Olive Oil
  • 2 lbs  Sirloin Steak, cut into bite-size pieces
  • 1 large Scallion, diced
  • 1 T Garlic, minced
  • Salt & Pepper, to taste
  • 2 T Arrowroot powder
  • 1 1/2 c Red Wine
  • 2 c Beef Broth
  • 6 oz Tomato Paste
  • 1 ilb Mushrooms, washed and sliced
  • 2 T Butter
  • 1 T Fresh Thyme
  • Fresh Chives, for garnish
Instructions

In a dutch oven on medium high heat.
Heat oil in your dutch oven. Add half of the meat, salt and pepper. Do not overcrowd the pan. You will have to do several batches. Brown the meat on all sides. Remove from pan and set aside.
Add more oil, if necessary. Add carrots, onion and garlic to dutch oven.Cook until aromatic.
Return the beef to the dutch oven. Sprinkle with the flour and mix well.
Add red wine and beef broth so that the meat and veggies are covered. Add the tomato paste.
Cover and bring to a simmer. Simmer one hour.
In a frying pan, add butter, mushrooms salt and pepper. Cook until mushrooms are browned.
Add the mushrooms to the beef bourguignon.
Serve immediately over mashed sweet potatoes.
Garnish with chives.
