Sausage and Vegetable Soup

It's soup season! Well . . . it's always soup season if you ask me. Where I live, the weather is currently -45 degrees Celsius and nothing (and I mean NOTHING) will warm you up other then a large bowl of delicious soup. I've made this recipe a handful of times over the past few months and it's absolutely delicious!
This sausage and vegetable soup is an easy go to for meal prep and a family favourite of mine. It's rich, hearty and packed full of nourishing ingredients plus a wonderful smoky flavour. Whip up a big batch on the weekend and enjoy as a delicious meal all week long. ENJOY! 😊
Sausage and Vegetable Soup

Ingredients
- 2 cups carrots, chopped
- 1/2 cup white onion, chopped
- 2 Tbsp olive oil
- 1 cup bell pepper, diced
- 2 Tbsp tomato paste
- 3 cups smoked sausage
- 1 - 540 mL canned chickpeas, drained and rinsed
- 1 - 540 mL canned tomatoes with juices
- 1 Tbsp Italian seasoning
- 1 tsp each; salt, pepper, garlic powder, onion powder, smoked paprika
- 4 cups chicken or vegetable stock
- 4 cups kale, stem removed and chopped
Instructions
- In a large stock pot, carrots, onions and olive oil. Sautee over medium high heat for about 3-5 minutes or until soft-tender.
- To the other vegetables, add in the bell pepper. Sautee for another 3-5 minutes.
- Add in tomato paste and allow to cook for another 3-5 minutes.
- Next, add in sausage, chickpeas, tomatoes, seasonings and broth.
- Lower heat to medium and simmer for about 15 minutes.
- Remove from heat and stir in the kale. Stir until wilted.
- Serve hot and enjoy! This soup keeps well in the fridge for up to 5 days.
