If it’s autumn, it means only one thing to me - spicy, filling, hot comfort foods, among which I would highlight chili con carne especially. It is very easy to make, as almost everyone has a pair of canned beans, sweet corn and tomato sauce at home. Really, all you might need freshly is meat. And if you want to make it in a vegetarian version, feel free to use any vegetables or even a few extra canned chickpeas. But grated pumpkin or zucchini can also be a perfect solution. I hope you give it a try and everyone will like it.

Ingredients

  • oil
  • 1 shallot, chopped
  • 1 glove of garlic, chopped
  • 1 chili, chopped
  • salt and pepper
  • 1/2 tsp. cumin, dried cilantro, smoked paprika, cinnamon, cocoa powder, oregano
  • 500 g (1 lb & 1 3/4 oz) of ground beef
  • 2 cans of any kind of bean (i used white beans and kidney beans)
  • 1 can of tomato sauce
  • 3 Tbsp. sweet corn
  • rice, cilantro, avocado for serving
  • roasted tortillas
Instructions

Heat some oil in an oven-proof pot. Add the shallot, garlic and chili and cook until caramelized. Season with some salt and pepper. Add all the spices and roast for a couple minutes.
Then add the meat and cook until it gets white everywhere.
Add the beans and tomato sauce, some water to reach the perfect thickness. Lastly, add the corn. Cook for 20 minutes.
Preheat oven to 120C. Place the pot to the oven and cook for another 40-60 minutes.
Serve with sliced avocado, rice and cilantro. Roast some tortillas as side for an extra element.
