Fall isn’t all about pumpkin spice, apples are also the quintessential Fall fruit and are perfect in pies, cakes and breads. This Spiced Apple Bread with Maple Glazed Walnut Topping is perfect to enjoy with a cup of tea, for breakfast or to add to your Thanksgiving buffet.

Good morning friends, today is Veterans Day, a day set aside to commemorate veterans of all wars. Today we honor these veterans for they patriotism, service and sacrifice. I have several vets in my family and I thank them and all of the other vets in the country for all they have done for our/my freedom and safety. If you know a vet or see one today and everyday thank them for their service!

I don’t know about you but I have one foot in Fall and the other in Christmas. I still have pumpkins on the porch and a few scattered in the house but slowly but surely the Christmas boxes are creeping into the house. I even have a tree up, no lights or ornaments but the tree is in the basket and ready to be decked in its holiday finery. It is hard not to be in full on Christmas mode with the copious amounts of catalogs and magazines arrive by snail mail daily.

Christmas baking is still a ways off so today I thought I would share a delicious apple bread that is perfect for your Thanksgiving buffet, breakfast or as a snack. This bread is moist and flavorful and the addition of the maple glazed walnuts makes it extra special.


Spiced Apple Bread with Maple Glazed Walnut Topping

Ingredients for Apple Bread


2 large baking apples, peeled, cored and shredded


2 tablespoons sugar


1/2 cup brown sugar


1/4 tsp. sea salt


11/4 tsp. ground cinnamon


1/4 tsp.ground nutmeg


1/4 tsp. freshly grated nutmeg


11/2 cups of flour


1 tsp. baking powder


1/2 tsp. baking soda


1/4 cup vegetable oil


2 large eggs, lightly beaten


1 teaspoon vanilla extract


3/4 cup chopped nuts


For Maple Glazed Walnut Topping

1/2 cup walnuts


1-2 tablespoons pure maple syrup


Directions for Apple Bread

Preheat oven to 350 and be sure that the rack is in the center of the oven. Prepare a loaf pan(8 x 4 roughly) with cooking spray and line with parchment paper.


Peel and core the apples, then shred with a grater. Place the apples in a bowl and add the white sugar, brown sugar, salt, cinnamon, ginger, and nutmeg. Mix well. Set the apples aside for 10 minutes


In a separate bowl which together the flour, baking powder and baking soda.


While you are waiting for the apple mixture prepare the maple walnuts. Preheat a dry skillet over medium-high heat, add the maple syrup and the nuts, stir until the nuts are toasted and the syrup is caramelized. Remove from heat and place on a silphat baking sheet until cool. Once cool chop roughly.


After 10 minutes add the oil, lightly beaten eggs, and vanilla to the apple mixture, stir until all of the ingredients are blended.


Stir in the flour mixture adding it in three parts, stir the mixture just until the flour disappears, then fold in the nuts.


Pour the batter into the pan then top with the copping nuts. Place pan into oven and bake for 55-75 minutes, check the bread after 30 minutes, if the top is browning too quickly cover with aluminum foil.


Once bread is done, a tester inserted into the center comes out clean, let cool in a wire rack for 10 minutes, then remove the bread from the pan and cool completely.
