Mango Salsa

Mango salsa is a must make recipe during the summer! It's refreshing and delicious - I could eat it on its own but it also pairs well with so many dishes. This is another side or topping that pairs well with Mexican or Caribbean meals. You could also just serve it with some corn chips!


For this dish, I prefer using Ataulfo mangoes because I find them juicier and enjoy them more. You can use a red mango if preferred. Some additional ingredients to consider adding are jalapenos, cojita cheese, grilled corn or red bell peppers.

Ingredients

  • 2 avocados
  • 2 Ataulfo mangoes
  • 1/2 red onion
  • 1/2 cup cilantro
  • 1 lime
  • 1 tbsp olive oil
  • 1/2 tsp salt
Instructions

Dice the avocados, mangoes, and red onion
Finely chop your cilantro
Place everything in a bowl then squeeze the juice from 1 lime and add 1 tbsp olive oil
Gently mix then season with salt
Adjust according to taste and enjoy!
