This watermelon goat cheese salad is full of flavor and easy to make. This recipe only takes 15 minutes to make. The salad incorporates Mediterranean flavors such as za'atar and sumac.
The dressing of this salad is the star of the show. You will need lemon juice, olive oil, zaatar, sumac, and salt to make the dressing. The Zataar and sumac add a lovely floral and tangy flavor to the salad that reflects the middle eastern cuisine.
Just add all the ingredients into one bowl and mix. Before serving the salad, taste it, and if it needs more salt or lemon juice, feel free to add more.
The salad is best served cold and on the same day. However, you can store it in the fridge in an air-tight container for no more than 48 hours.

- 35 oz of Chopped Watermelon with seeds removed
- 2 Red or White Onions Chopped
- 2 Cucumber diced into circles
- 2 cups of Baby Spinach
- 4 oz of Cherry Tomato Sliced in half
- 1.5 oz of Seedless Green Olives
- 1.5 oz of Seedless Black Olives
- ¼ cups of Lemon Juice
- ¼ cups of Olive Oil
- 1 tbsp of Za'atar
- 1 tbsp of Sumac
- ½ tbsp of Salt
- 4 oz of Feta Cheese (Goat Cheese)
Instructions
- Add all the ingredients to one bowl and mix.

I've never seen a more beautiful summer salad - this looks fantastic
I will definitely have to try! It looks delicious. Most people don’t know that watermelon is a vegetable and tomatoes a fruit. Seems normal for the two to be teamed together. 2 of the ingredients l’m not familiar with but will research. Thank!
