Sweet Potato Salad With Lentils

This hearty salad is one of my go to dishes and is a great meal prep recipe. It's super simple to make, versatile, and tastes great! All you need are greens, lentils, sweet potatoes, onions, and cheese. Oh and a yummy dressing! I'm a sucker for a simple balsamic dressing, but you can swap that out for whatever dressing you prefer.
This salad can be served as a side dish or a meal. Omit the cheese if you are a vegan, add chicken for more protein, avocado for more healthy fats, whatever your heart desires!

Sweet Potato Salad With Lentils
Recipe details
Ingredients
- 4 cups arugula
- 2 sweet potatoes, roasted & diced
- 1/4 cup french lentils
- 1/4 red onion
- 1 tbsp olive oil
- salt & pepper to taste
- goat cheese to serve
- balsamic to dress
Instructions
- Heat oven to 425F then add your diced sweet potatoes
- Drizzle with olive oil and season with salt & pepper
- Roast for 20 - 30 minutes, flipping halfway
- While the sweet potatoes roast, cook your lentils per packaged instructions
- Once the lentils & potatoes are cooked, add them to a bowl of arugula
- Add sliced onions and goat cheese
- Dress the salad and enjoy!
