When I go to summer bbqs or family gatherings, I'm all about enjoying the memories and focusing less on if the food is "healthy" or not. However, I do love bringing something light and refreshing so that I know I have a healthy option available. If you're also looking for an easy recipe to bring to all your summer events, this broccoli salad is a perfect option. Don't get me wrong- burgers and creamy potato salad are a must, but a light broccoli salad is also a great pairing to those heavier foods. A big plus- it's made out just a few simple ingredients that you probably already have at home!

Ingredients
Broccoli salad
  • 1 lb chopped broccoli florets
  • 1/2 cup dried cranberries
  • 1/4 cup toasted sunflower seeds
  • 1/4 cup roughly chopped almonds
  • 2 minced garlic cloves
  • 1/2 cup chopped red onion
Dressing
  • 1/3 cup olive oil
  • 2 tbsp apple cider vinegar or white vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey or maple syrup
  • 1/4 tsp salt
Instructions

Roughly chop the broccoli florets.
Add the dried cranberries, toasted sunflower seeds, almonds, and red onion.
Combine the dressing ingredients and incorporate with the broccoli mixture.
Serve immediately or set in the fridge for up to 3 days.

    Is this recipe supposed to include 2 cloves of minced garlic? I saw it in the ingredients list but not in the assembly instructions.
