Mango and Lentil Salad
  • 1 cup lentils
  • 1 mango, diced
  • 1/2 cup cilantro, chopped
  • 1/2 red onion, diced
  • 1/4 cup cashews, chopped
  • 1 tomato, diced
  • 1 cucumber, diced
Creamy Curry Dressing
  • 1/4 cup tahini
  • 1 tsp lemon juice
  • 1 tsp rice vinegar
  • 1 tsp honey
  • 1 tbsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp olive oil
Mango and Lentil Salad with Creamy Curry Dressing
Cook lentils according to package directions
In the meantime, on a large cutting board, dice/chop each food in ingredient list
In a medium mixing bowl, mix all salad ingredients except dressing ingredients
In a small mixing bowl or glass measuring cup (for easier pour), mix all the dressing ingredients together
Pour desired amount of dressing over salad and mix well
  • Use green or red lentils, the color does not matter
  • Add more curry seasoning if it tastes bland, add less if it tastes too much
  • You can also add a sprinkle of cayenne pepper for a spicier sauce
