Welcome! I am so glad that you are here. I always enjoy our time together. Aren’t you so excited about sunny days? And warmer weather? And the hope of summertime? I sure am. It has been a very rainy Spring. I think that we should just jump straight into summer. I am so ready for sunny days on the lake, hearing giggles from the kids as they splash around. I am also excited for the family favorites for summertime foods. Today, I am sharing How to Make the Best Potato Salad Recipe. Come on, I’ll show you.

How to Make the Best Potato Salad Recipe

Oh my goodness! This is one of my all time favorites and it didn’t last long after the photos were taken. I love this easy and delicious family favorite. I always thought that I hated potato salad. My mom always made a huge Tupperware bowl of old fashioned potato salad all summer long. She put pickles and onions in it. I definitely don’t like pickles and onions in my potato salad. How do you make potato salad taste better? There are no rules, you can make it however you want to. I try to limit my carbs, so I came up with this easy and delicious sweet potato salad, it’s even better than the traditional potato salad. Yep, you read that right. I use golden sweet potatoes in my potato salad recipe.

One of my favorite things about being a grown up is making food the way that I like it. Luckily, my husband is so easy to please and he loves just about anything that I put in front of him. Early on, we made a deal that I wouldn’t cook with his three least favorite foods-black olives) because he grew up on a sheep ranch and they looked like…enough said) mushrooms-because they grow in stuff that looks like said olives and eggplant. This delicious sweet potato salad recipe has few ingredients and you are definitely going to love it. What is potato salad made of? I use golden sweet potatoes, bacon, hard boiled eggs, mayo, Grey Poupon mustard, salt and pepper, just a touch of honey and I garnish it with fresh parsley. You can add your favorites to this recipe and remove anything that you don’t like.

Is it better to boil potatoes whole or cut up for potato salad?

I thought this was a really weird question, but you would be surprised how many people ask google this question. I peel my potatoes and then cut them up into small bite sized pieces. They cook much faster when they are cut up first. I put just enough water in my pan to cover the potatoes, then I cook them just until they are tender. You don’t want to overcook the potatoes or you will get a consistency closer to mashed potatoes. After the potatoes are cooked, I drain off the water, rinse them and then let them sit in cold water until they are completely cooled. This stops the potatoes from cooking further and the heat from the potatoes doesn’t change the consistency of the mayo and mustard.

Do you have to put eggs in potato salad? No, but I like eggs in my potato salad.

After the potatoes are cooked and chilled, I add the diced hard boiled eggs, bacon, mayo, Grey Poupon, honey, salt and pepper. I add a bit of finely chopped parsley and mix well. I garnish with a sprig of fresh parsley on top.

The Best Sweet Potato Salad Recipe

Serving Size:6 servingsTime:30 minutesDifficulty:Easy

Ingredients

  • 3 Medium Sweet Potatoes
  • 2 Hard Boiled Eggs
  • 1/2 Bacon, cooked, crumbled
  • 1 c. Mayonnaise, add more if you like a creamier potato salad
  • 1/3 c. Grey Poupon Mustard
  • Salt and Pepper
  • 1 T. Honey, optional
  • Fresh Parsley


Directions

  1. In a medium stock pot, add diced potatoes. Add enough water to cover the potatoes. Cook until potatoes are just tender. Drain off water. Rinse with cold water. Let the potatoes sit in cold water until they are completely chilled. Drain water.
  2. In a medium bowl, add chilled potatoes, diced eggs, bacon, mayonnaise, mustard, honey, parsley and salt and pepper to taste.
  3. Mix well.
  4. Enjoy!
