Simple Arugula Salad

Has anyone else heard that arugula is "spiced lettuce"? I know it sounds funny! I absolutely love arugula! It is so full of flavour and goes well with so many foods, recipes, etc. This arugula salad is very simple and easy to make. My fiance and I love having it as a pre-meal snack, as a side with our meals, or as a late night snack when we don't want to eat anything too heavy. What I love about salads like this one in general is how we can all adapt them to our own liking, you can add your favourite veggies, or if you're like me you'll add olives!

Ingredients

For the salad

  • 142 g of arugula
  • 1 pint of cherry tomatoes
  • 1 cucumber
  • 1 or 2 avocados
  • 1 or 2 bell peppers (I like to use orange or yellow to add more colour)
  • 4

For the dressing (I eyeball the dressing ingredients)

  • olive oil
  • balsamic vinegar
  • dried oregano
  • dried parsley
  • salt and pepper to taste

Instructions


Add the arugula mix to a bowl.
Chop and slice all of your veggies and add them to the bowl
Add the dressing ingredients
Add the dry ingredients (oregano and parsley)
Mix everything together and enjoy!
