I LOVE this recipe so much and usually make it a few times a month of quick and easy lunches on the go. Here are a few tips I have to make this recipe even easier for when you’re in a rush:


  1. Use a rotisserie chicken rather then roasting/boiling the chicken.
  2. Premix the dressing and have it ready and on hand! Then when you are hungry, do a quick chop of the salad and voila, lunch is served!
  3. Serve with a handful of crackers or bell pepper slices.

Ingredients

  • 4 cups chopped chicken breast
  • 1 cup diced celery
  • 1 cup sliced red grapes
  • 1/2 cup toasted nuts (almonds, walnuts or pecans work great!)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup light mayonnaise
  • 1 Tbsp prepared Dijon mustard
  • 1 tsp each salt and pepper
Instructions

In a large mixing bowl, combine chopped chicken, celery, grapes and nuts. Use a spoon to fully mix together and set aside.
In a large glass measuring cup, whisk together plain Greek yogurt, mayonnaise, mustard and seasonings. Whisk until combined.
Pour prepared dressing over the salad and toss to evenly coat.
Cover and allow to sit in the fridge for at least 30 minutes (but a few hours to over night is best!). Serve in a sandwich or with crackers - YUM!
Tips
  • Adding in a teaspoon or two of curry powder is DELICIOUS!
