Hello summer time!


Warm weather is here where I live and I’m craving all things light, fresh and simple! This black bean and corn salad is SO tasty. It’s full of perfect summer flavours and pairs well with any bbq protein or even taco chips for a dip!


It’s a great make ahead salad. Just chop all of your vegetables and make your dressing up to 24 hours before eating. Then, toss it all together before your meal for an easy side dish that is definitely a crowd pleaser.


This salad features black beans, corn, fresh chopped vegetables and cilantro. Bringing it all together is the tastiest cilantro lime dressing.

Ingredients
For the salad
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1/4 red onion, diced
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
For the cilantro lime vinaigrette
  • 1 avocado
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cilantro, stems removed
  • Juice of 1 lime
  • 2 cloves garlic
  • Salt and pepper, to taste
  • Olive oil, as needed
Instructions
For the salad
In a large bowl, combine all of the listed salad ingredients. Use tongs to toss together. Set aside.
For the vinaigrette
Place all of the listed ingredients in a blender or food processor.
Begin to pulse on LOW and drizzle in olive oil until desired consistency is reached.
Continue to blend until smooth.
Set aside.
To assemble
Drizzle prepared salad with desired amount of vinaigrette.
Use tongs to toss together the salad.
Serve cold with a fresh squeeze of lime before serving. Enjoy!
Tips
  • Have fresh corn? Use about 2-3 ears with kernels trimmed off in this recipe if you wish! Add fresh corn to a small fry pan with a drizzle of oil. Cook over medium heat until tender. Cool and then use as directed in the recipe.
