I’m always looking to create recipes that are quick, healthy and easy because I work a busy job and don’t always the time to cook! This recipe is just that and more. You’ll have this recipe on rotation weekly for easy throw-together lunches and dinner. I love to double the recipe and make a large batch to have all week long.


The best part about these burgers: they are so dang versatile. You can pair them with a delicious salad loaded with crunchy veggies or a side roasted veggies. I also love pairing them with a light healthier kind of coleslaw.

Ingredients
Ingredients
  • 1 lb ground turkey
  • 1 zucchini, grated
  • ¼ cup chopped cilantro
  • ½ cup chopped mint
  • 1 egg
  • 3 spring onions
  • 3 garlic cloves
  • 1 inch of ginger, grated
  • 1 tsp salt
  • 1 tsp pepper
Instructions
The How To:
In a large bowl, mix all the ingredients until really well incorporated. I like to use my hands to mix it all together as it allows me to really make sure everything is incorporated well.
Form small, even patties about 2-3 inches.
Heat up a skillet to medium heat. Cook about 4-5 minutes each side until done. If you want to be 100% sure the patties are cooked through, you can pop them into the oven at 350 for 10 additional minutes.
