I usually have leftover chicken from either a rotisserie chicken or grilled chicken. I easily chopped the chicken for salads during the week, but this time I buffalo’d it and created a deliciously satisfying quesadilla. Ready?! Let’s do this!

I start by heating pan and placing the burrito shell on it to heat up.

I add my first layer of cheese. Since I don’t like blue cheese, I chose provolone. Pepper Jack or Monterey Jack would also be great choices!

I loaded up the chicken! I added it smothered in buffalo sauce to 1/2 of the burrito shell.

Add in the diced red onion.

Add in the green olives.

Add in some shredded sharp cheddar cheese for the final layer.

Cook and then flip the other side of the burrito shell and press it down to make sure it sticks to the last layer of cheese.

This quesadilla was so flavorful! I could even see myself dipping it into more buffalo sauce 😆. I hope you enjoyed this recipe, now get creative with your food!

Ingredients

  • 1 cup cooked chicken
  • 3 Tbsp. buffalo sauce
  • 1 burrito shell (spinach)
  • 2 Tbsp. Diced red onion
  • 1 Tbsp. Sliced Spanish green olives
  • 2 slices provolone cheese
  • 2 Tbsp. Shredded sharp cheddar cheese
Instructions

Heat saucepan to medium low heat.

Add burrito shell and provolone cheese.

Next add buffalo chicken on one half.

Spread red onion, then green olives, then cheddar cheese. Cook for 5 min.

Flip empty half of the burrito on top of the loaded half and press down. Cook for 2 minutes.

Remove from the heat and cut into 4 pieces.

    Sounds easy and delish! From your photos I think you mean frying pan rather than sauce pan mentioned in the instructions.
