I have been craving chicken parmesan for awhile now, but had been putting it off due to thinking it would take too much time. I finally decided to take the time to make it last weekend. I was not disappointed; the crispy chicken, savory marinara sauce and gooey, melted cheese hit the spot. The best part was it actually didn't take me as long to make it as I thought it would. I saved time by preparing the chicken ahead of time and baking the chicken in the same skillet it was fried in. The result was an easy, and delicious meal my whole family loved! I will definitely be making this chicken parmesan more often.




I served it over whole wheat pasta with a side of roasted broccoli for a well rounded meal my whole family enjoyed.

You can prepare the chicken ahead of time by dredging it in flour, eggs, and breadcrumbs and placing in an air-tight container in the refrigerator until ready to cook.

Dredging the chicken in flour and then breadcrumbs creates a delicious golden and crispy crust.

Placing the skillet directly into the oven saves time and clean up!

The end result was a ooey, gooey delicious meal good enough for a weekend but easy enough for busy week nights.

Ingredients

  • 2 large chicken breast, cut in half horizontally
  • 1/4 cup flour
  • 1 cup Italian breadcrumbs
  • 1/2 cup parmesan cheese
  • 2 large eggs, whisked well
  • 2 tbsp. olive oil
  • 1 jar marinara sauce
  • 2 cups shredded mozzarella cheese
  • Salt and Pepper to taste
Instructions

Preheat oven to 375 degrees F
Season each chicken breast with salt and pepper
In 3 shallow bowls add flour to one, eggs to one, and breadcrumbs mixed with parmesan cheese to one
Dredge each chicken breast in flour, egg mixture, and finally breadcrumb/parmesan cheese mixture
Heat olive oil in a large oven-proof skillet over medium high heat and cook each chicken breast for 3-4 minutes on each side until golden brown
Top chicken with marinara sauce and mozzarella cheese and bake for 20 minutes.
Tips
  • Serve over pasta or mashed potatoes with a vegetable on the side for a well rounded meal.
  • Substitute spaghetti squash, zucchini noodles, or mashed cauliflower for a lower carb meal.
