If you’re not a fan of tahini, continue reading because you can substitute it for another ingredient 😉 This chicken recipe uses very few ingredients but let me tell you, it tastes like it has many and the flavor is wonderful. The tahini gives it a great texture and almost a nutty flavor. The lime juice and garlic just add a different level. We use tahini a lot and I was first introduced to it 34 years ago when I met my husband. We use it for everything from hummus to pastries.




WHAT IS TAHINI you ask:


If you’ve never heard of it; tahini is a Middle Eastern condiment that’s made from toasted ground hulled sesame seeds. It is eaten by itself or used as a major ingredient in hummus, baba ghanoush, and even desserts. Alone it has a lighter color than peanut butter, but it doesn't taste like peanut butter. It’s not sweet like nut butters, but it does have a nutty flavor and it’s a little more strong and earthier than most nut butters. The taste alone is not the same as when it’s added to other ingredients. We love it! If you are familiar with it and not a fan, I recommend substituting it for plain Greek yogurt. It will work just as well.

A QUICK TIP:

If you’re in a hurry, just place all ingredients into one bowl with the chicken, mix very well, cover and proceed to marinating. I did that in this recipe this time but normally I mix the tahini in a separate bowl.

Fresh squeezed lime juice is always the best.

Ingredients
For the chicken
  • 2.5 lbs organic chicken thighs, approximately 5 thighs, rinsed and pat dried. (I’m not a fan of breasts but you can use them if you like).
  • 2 Tbsp organic tahini (see tips)
  • 5 minced garlic cloves or more
  • Juice of 2 to 3 limes
  • Salt & pepper to taste
Instructions
For the chicken
Place all ingredients in a bowl, except the chicken and whisk until well incorporated.
Place chicken in a separate bowl and add tahini mixture over the chicken. Tub and mix until the chicken is completely covered with all ingredients. 
Cover and allow to marinate for an hour or overnight in the refrigerator. The longer it marinates the more flavorful it will be.
Place chicken in a 9 x 13 baking dish & bake uncovered at 400°F until  internal temp is 165°F, (approximately 30 minutes). You can also grill it if you prefer.
Remove from oven.
Sprinkle with paprika and serve with your favorite sides. 
Tips
  • You can substitute plain Greek yogurt for the tahini.
