Slow Cooker Chicken, Potatoes & Green Beans
Throw everything into your slow cooker, turn it on, let it cook and have a complete meal ready at the end of the day!
You know I’m all about a one-pan meal! How about a one-pot slow cooker meal? What!? Yes! This slow cooker chicken, potatoes and green beans is literally so simple to make and the best part is when it’s done cooking, your entire meal is ready! No need to make side dishes in your oven or on the stove.
One-pot meal means one pot to clean! YAY!
I consider this recipe more of a method, since it’s versatile and you can modify it to accommodate what you already have at home- using different veggies, seasonings, etc.

Slow Cooker Chicken, Potatoes & Green Beans
Recipe details
Ingredients
- 2 lbs boneless skinless chicken breasts
- 1.25 lbs red potatoes diced
- 1/2 lb fresh green beans trimmed
- 1/2 red onion thinly sliced
- 4 garlic cloves minced
- Salt & pepper to taste
- 1 Tbsp oregano
- 1/2 tsp chili flakes *adjust according to heat preference
- Olive oil
- 1 15 oz can of tomato sauce
Instructions
- Place the chicken breasts in the middle of the slow cooker.
- Add the potatoes on one side of the chicken (you will need to create a mound).
- Add the green beans to the other side of the chicken.
- Season everything with salt, pepper, oregano, chili flakes and minced garlic.
- Top the chicken with red onions.
- Generously drizzle olive oil over everything.
- Add the entire can of tomato sauce and stir around so everything gets coated.
- Place lid on slow cooker and and set to low for 7 hours or high for 4 hours- don’t open lid while cooking.
- Once finished cooking, stir everything before serving.

Could something besides tomato sauce be used for the liquid? How about chicken broth?
I defrosted my chicken too late to do this in the slow cooker so I am doing low and slow in the oven. 3 hours at 275. I heated it in the cast iron pot on top of the stove first before putting it in the oven. It smells and looks amazing. Can't wait to eat it. one hour to go!
