Slow Cooker Chicken Chili Recipe

This post is about making a chicken chili recipe that is done in a slow cooker and easy to make. Follow along and learn how I made this excellent weeknight dinner meal for the family.

Here are all the ingredients. The chicken breast is one pack of chicken about one pound or so.

Rinse the cannellini beans.

Chop up the onions.

Then it was time to add the ingredients to the slow cooker. First, I added the chicken, then the other things.

I added all the ingredients and then the spices and salt and pepper.

Here is the dish for dinner. It made a good amount for our family.

Ingredients

  • 3 chicken breasts whole about 1 lb
  • 2 cubed zucchinis
  • ½ large onion chopped
  • 4.5 oz can of sweet green chilis
  • 16 oz. can of cannellini beans - rinse and drain
  • 1 tablespoon Cumin
  • 1 teaspoon Himalayan pink salt
  • ½ teaspoon black pepper
  • 4 cups of chicken broth
Instructions

No need to brown the chicken breast, place the chicken breast into the slow cooker.
Then add the cannellini beans to the slow cooker.
Chop the onion and add it to the slow cooker.
Add the green chili peppers. Make sure they are chopped already. If not, you will need to chop them up before tossing them into the slow cooker.
Add the cumin to the slow cooker. Then, add the salt and pepper.
Now, add the broth and stir.
Cook on low for 5 hours.
Shred up the chicken and then add the cubed zucchini. Cook for about ½ hour to 1 hour until the zucchini gets nice and green. Then, turn off the slow cooker and enjoy!
Tips
  • If you want it spicy, you can add some chopped Jalapeño.
