Homemade Chicken Hibachi

I was in the mood for some chicken hibachi but I didn't want to spend the money going to an actual restaurant so I decided to make it myself! Now I didn't do all the tricks but I think it turned out tasting just as good.

Start by sautéing onions and garlic.

I get these little ginger packets from trader Joe's and stick them in the freezer. In the past whenever I would get ginger it would go bad since I don't cook with it that often.

Earlier that morning, I had marinated some chopped up chicken breast with Thai chili sauce from Trader Joe's.

I added the chicken with a piece of butter to the sautéed onions and garlic. I also added shredded carrots. I didn't have any mushrooms but I would have added them at the step as well.

Now for some soy sauce, salt and pepper to taste..

Add in some eggs and fried them up for the fried rice.

Finally, I added a cup of cooked rice and mixed it all together. Add some scallions on top.

They sell yum sauce or Asian chili sauce at most stores which makes for a good edition to this dish!

Ingredients

  • 1 lb chicken breasts, diced
  • 1/2 cup Thai chili sauce
  • 1 1/2 tablespoons oil
  • 1 tablespoon butter
  • 1/2 tablespoon minced ginger
  • 2 cloves garlic minced
  • 1/2 cup shredded carrots
  • 1 cup sliced or quartered mushrooms
  • 1 small yellow onion
  • 1 tablespoon soy sauce
  • salt & pepper to taste
  • 1 cups cooked rice 
  • 2 eggs, whisked
  • 4 green onions
Instructions

marinate diced chicken in Thai chili sauce for several hours or over night
in a pan, sauté onions, ginger and garlic in oil
add the chicken and cook on all sides
and carrots, mushrooms, seasoning and soy sauce and sauté for another 10 minutes
add in whisked eggs and fry
add in cooked rice
mix together and garnish with scallions
