This simple cream cheese stuffed chicken uses chicken breasts that are coated in everything-seasoned panko, stuffed with a spinach, scallion and cream cheese filling, then baked until golden.

Talk about a quick and simple dinner!

I know the everything seasoning has been around for a bit, and I’m not sure what took me so long to discover it, but man I’m glad I did.

I keep a jar with my other spices at all times. It’s one of my pantry staples that I can use on anything if I’m in a pinch and need some good flavor.

This everything cream cheese stuffed chicken is not only quick and easy to make but it’s got a ton of flavor and the spinach adds a hidden vegetable for those picky eaters icon

You can even bake them in your air fryer! (see recipe notes at bottom)

Ingredients

  • 2 cups fresh spinach
  • 4 ounces cream cheese, at room temp
  • 1/4 cup sliced scallions
  • 2 teaspoons + 1 tablespoon everything bagel seasoning
  • 4 chicken breasts, thin sliced
  • 1 cup panko bread crumbs
  • 1/2 teaspoon black pepper
  • 1 egg, beaten
  • olive oil, for drizzling
Instructions

Preheat oven to 375 F.
Cook spinach in saute pan until wilted. Drain excess water.
In small bowl combine cream cheese, cooked spinach, scallions and 2 teaspoons of everything bagel seasoning. Set aside.
Place chicken on cutting board and pound until about 1/4" thin. Evenly spread cream cheese mixture among the 4 chicken breasts. Roll the chicken up and secure with a toothpick.
In a shallow bowl combine panko, 1 tablespoon of everything bagel seasoning and black pepper. In another shallow bowl add beaten egg.
Dip rolled chicken first in the egg, letting the excess drip off, then in the panko mixture pressing firmly to ensure the coating sticks. Place coated chicken on baking sheet, toothpick side down. Repeat with remaining chicken.
Bake for 25-30 minutes or until outside is golden and chicken reads 165 F internally. (To ensure chicken is extra golden and crispy I like to place under the broiler for 1-2 minutes.)
Tips
  • You can find everything bagel seasoning in the market or you can make your own!
  • To make in the air fryer, lightly spray bottom of air fryer with non-stick spray. Add chicken and cook at 385 F for 20-25 minutes or until internal temp of chicken reads 165 F

I was very excited to try this, because it sounded delicious. I feel like the cream cheese filling was missing something. I’d like to know how you measured the spinach. My two cups did not make the filling filling as green as the photo. I liked the panko mixture, but my husband said it had too much pepper. I disagree.

Hi Missy, I’m sorry you felt the cream cheese was missing something. The bagel seasoning and scallions have a lot of flavor so I’m not sure. As far as the spinach, I used 2 cups of fresh spinach.
