Creamy Parmesan Chicken and Rice

This creamy parmesan chicken and rice has become a staple in my household. It is the perfect week night dinner because it is quick, easy, delicious, and can be adjusted to either feed a large crowd or just a single person. Plus, leftovers are just as good the next day. You do not need very many ingredients and you might already have most of them on hand! I like to serve the dish along side a green vegetable such as broccoli, asparagus, or Brussels sprouts, but it also would be really good if you mixed the veggies right into it.

Ingredients

  • 1 1/2 cups rice
  • 3 Tbsp butter
  • 3 garlic cloves 
  • 1 chicken breast
  • 3/4 cup chicken broth
  • 1/3 cup heavy cream
  • 1/2 cup parmesan
Instructions

Cook rice according to directions.
Dice chicken and season to your liking. I did garlic powder, paprika, Italian seasoning, salt & pepper.
In a skillet over low heat, melt better and sauté garlic cloves.
Add in the diced chicken and cook until no longer pink.
Add the rice into the skillet and then pour in the chicken broth and heavy cream.
Add extra seasonings if you’d like. I did Italian seasoning, thyme, salt & pepper.
Then add in the parmesan cheese. I did a mix of shredded and grated.
Stir and let simmer for a few minutes until it thickens.
Serve with a veggie!
