A creamy soup idea

Soup in winter is always my favorite dinner or lunch. It's so easy to make and serves as a perfect leftover!


Ingredients in creamy chicken rice soup

You can adjust the cups of water and milk according to your family members!

You will need garlic, onion, carrots and peas. You can always add your other favorite veggies to the soup!

Use any kind of rice you may prefer. I used jasmine rice from Good Earth Malta.

If you want to keep this recipe dairy-free, use dairy-free milk, if not, use any milk you may prefer.

You will need chicken broth for this recipe, you can also use 1 “bullion cube” and water instead.

You will need 1 chicken breast, shredded. I just boiled the chicken beforehand and used two forks to shred it.

Tools you will need to make this

You don’t really need much to make this recipe and you can easily use what you already have on hand.

You will need:

  • 1 pot
  • 1 small pot or a rice cooker
  • 1 cutting board

For measuring: 1 tsp, 1 tbsp, 1/3 cup, 1 cup.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion
  • 1 garlic clove
  • 2 carrots
  • 1/3 cup frozen peas
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1-1/2 tablespoons flour
  • 1 chicken breast, shredded
  • 2-3 cups chicken broth
  • 2 cups dairy-free milk
  • 1 cup rice
  • Parsley to top
Instructions

Start by chopping the onion and carrots and mincing the garlic.
Cook the onion and garlic in the oil then add the carrots, salt and pepper.
Mix all together then add the flour, milk and chicken broth.
Add the chicken and mix together.
In the meantime, cook the rice according to package instructions.
Once the rice is slightly al-dente, add it to the soup.
Add the peas and mix together.
Turn off the heat, top with parsley and serve. Enjoy!
