Baked Chicken Parm

Chicken Parm, but a little healthier. This chicken parm recipe was super easy to make and requires minimal ingredients. I actually decided to make this because we had a bunch of Rao's pasta sauce leftover. I thought this was a great way to reuse some leftover ingredients that we had, and to not continuously eat a bunch of pasta until we're sick of it. This was a hit and a great way to get some protein in with the chicken. Baking it also made it super easy to clean up. This meal will definitely be on repeat for my family the next time we have leftover pasta sauce!

Ingredients

  • - 2 chicken breasts, sliced in half
  • - 1/2 cup panko breadcrumbs
  • - 1/4 cup grated parm
  • - 1 tsp oregano
  • - 1 tsp garlic powder
  • - 1/2 tsp salt
  • - 3/4 cup Rao's marinara
  • - 4 slices of mozzarella
  • - 2 tbsp butter, melted
  • - fresh basil
Instructions

Preheat oven to 450.
Combine the breadcrumbs, parm, and spices.
Slice the chicken breasts in half and brush with the melted butter.
Dip into the breadcrumb mixture and place on a baking sheet to bake for 25 min.
Remove from oven and add about 1 tbsp of sauce and a slice of mozzarella on each piece of chicken.
Bake for a few more minutes until the cheese is melted.
Top with fresh basil.
