Savory Waffles

The very first recipe that I posted on my blog and on instagram was for confetti fritters. It is basically a bunch of vegetables mixed with a bit of flour and the liquid from a can of beans (aquafaba) that are fried into fritters. It was my very first experiment with aquafaba and I've come a long way since then!

I decided to revisit this recipe lately and update it. I left the original recipe there, but put a twist on it by using slightly different veggies and putting the batter into a waffle maker.

The result? Super healthy savory waffles that reminded me of my grandmother's potato pancakes (but with lots more veggies). I ate some hot off the press with a dollop of cashew sour cream and saved the rest to eat as "bread" the next day with some hummus and even more veggies.

This is truly a versatile recipe!

Side note: I decided to make this my first YouTube recipe on my Can't Beet Plants channel, but didn't realize that you had to put your phone horizontally instead of vertically. Technology is not always my friend.

Ingredients

  • 1/2 sweet potato, peeled
  • 1/2 small onion
  • 4 cloves roasted garlic
  • 3/4 cup riced broccoli
  • 3/4 cup riced cauliflower
  • 1/2 -1 teaspoon salt
  • 1/2 cup oat flour
  • 1/2 cup aquafaba (liquid from a can of chickpeas or other white bean)
Instructions

Grate the potato and onion and place in medium bowl.
Add the cauliflower and broccoli (I pulse them in a food processor until they are finely chopped). Mix well.
Add the flour, salta and aquafaba and stir to combine. The batter will be very thick.
Using your waffle iron, cook the batter in batches at a high setting so that the veggies cook and the better sets. I got 2 (4 Part) waffles and put my waffle maker on the highest setting, which is 5.
Tips
  • Store the aquafaba in the refrigerator for up to 2 days in a sealed container. If you want to keep it longer, use ice cube trays to freeze it into cubes.
  • The goal is to have 2 cups of veggies total, not counting the onion. I measure the sweet potato after grating, and the veggies after ricing them.
  • These don't need as much salt as you think, so I'd start with the 1/2 teaspoon. You can always add salt after they are cooked since they are meant to be savory anyway.
