Looking for a quick and healthy breakfast recipe? If yes, then this recipe is for you!! These waffles not only taste delicious, but they are packed with protein. I love eating these as my post workout meal in the morning to allow my muscles to recover!

For my waffles, I love to top with lots of fresh berries and syrup. These would also be good topped with nut butter, chocolate or jam!

This recipe makes 6 mini waffles - the same size you would buy in the freezer section at the grocery store.

Only 6 ingredients in this recipe! Feel free to use another flavour of protein to mix it up.

Ingredients

  • 1/3 c. vanilla protein powder
  • 1/2 c. almond milk
  • 2 eggs
  • 1/4 c. oat flour
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
Instructions

Put all ingredients into a blender or a small bowl, and mix.
After the batter is mixed, it will be runny. You must let the batter sit for 5-10 minutes to thicken. This step is very important!
After the batter gets to a thicker consistency, heat up your waffle iron.
Grease the waffle iron, and pour in 1/3 cup of the batter.
Let cook for 3 minutes, or until golden brown.
Top with your favourite fruit & syrup!
