A Protein Packed Ceasar Dressing
Eating healthy can be challenging and to me there’s nothing harder than the salad dressing aisle, so many to choose and navigate through ingredients, I often end up opting for olive oil, a vinegar and seasonings, but sometimes you want that creamy texture that an oil & vinegar dressing doesn’t satisfy. This recipe has a secret ingredient that just happens to be a favorite thing of mine that I NEVER discard.
Dill pickle juice!
liquid gold in my opinion, once the pickles are done just leave it in the fridge, my normal use is throwing a few hard boiled eggs in it with a little mustard for a few days! 😋 but this is the secret to this great dressing!
I used the classic cruet bottle, everyone who grew up in the 70s or 80s has one of these
Here’s the basic ingredients, Greek yogurt, Dijon mustard, minced garlic, lemon, olive oil, salt and pepper and of course the pickle juice!
I not only used the lemon juice but lemon zest is never a bad idea
Whisk all the ingredients together then place in cruet for serving.

Ingredients
- ⅔ cup non-fat plain Greek yogurt, I used Fage
- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice and 1 teaspoon zest
- 2-3 Tbsp dill pickle juice, I think I actually used a little more because I love the briney flavor so much!
- 1 Tbsp Dijon mustard
- 2-3 cloves minced garlic
- Salt & pepper to your liking, I suggest more pepper than salt
Instructions
- Whisk all ingredients together and pour in a cruet, refrigerate and use within 7 days
