If I am making Pork Chops for dinner, I like to smother them in gravy and whatever else I can find to make them flavorful and tender. My recipe is inspired by https://juliasalbum.com/. Like always, I made some changes to the recipe.

Let's get going

So, tonight I smothered my Pork Chops in Bacon and Mushrooms. And of course, I did add some gravy. Again, I am not the gravy master maker in my family, my Mom is.

I love the flavor that the Bacon adds to the Pork Chops. I cut back on the Mushrooms and realized that I could have used a few more. Maybe next time I'll add few more to the mix.

All in all, this came out really well. My husband said the gravy was really good! I'll take that as a compliment!

Ingredients

  • 4 strips bacon , uncooked
  • 4-6 pork chops (thin)
  • salt and pepper
  • 6 oz mushrooms , sliced
  • 3 garlic cloves , minced
  • 3-5 sprigs fresh thyme , just leaves
  • 1 tablespoon butter
  • 2 tablespoons flour
  • ⅔ cup chicken broth
  • ½ cup heavy cream
Instructions

Cut bacon into bite size. In a large cast iron skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate or napkin, leaving the fat in the skillet.
Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the cast iron skillet.
Add sliced mushrooms and minced garlic to the skillet. If needed, add 1 tablespoon butter.  Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low. 
Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.
To serve, top pork chops with mushroom and bacon mixture.
