Meatballs in Barbecue Sauce

One of my make ahead dinner dishes are meatballs. I can make them ahead when I’m meal prepping on Sunday and during the week, I can decide to serve them with any sauce I like. My kids of course love any sauce that is like sweet and sour sauce. I usually always make a batch of barbecue sauce in the summer with the sour cherries that we pick and it is perfect served with the meatballs. But, you don’t need a homemade sauce, any store bought barbecue sauce will work just fine and taste great.


I have noticed that a lot of meatball recipes use breadcrumbs and milk as a filler and to make them softer in texture. In the Asian culture, we don’t add these fillers so I prefer my meatballs without them. They are purely made from ground beef and pork and seasonings. We really enjoy the meatier texture as the softer texture sometimes seems too mushy or too much like meatloaf to me.


These meatballs work great as an appetizer. Imagine cute little toothpicks in them. But they also work great as a main dish and served with rice.

Ingredients

  • 1.5 lbs ground beef
  • 0.5 lb ground pork
  • 1 tsp garlic powder
  • 2 garlic cloves, grated
  • 1/4 onion, finely minced
  • 1 tbsp mustard
  • 2 tsp soy sauce
  • 1 tbsp worstershire sauce
  • 1 tsp kosher salt
  • black pepper
  • 2 cups barbecue sauce of your choice
Instructions

In a large mixing bowl, add in the onion, garlic, garlic powder, soy sauce, worstershire, mustard, salt, pepper, ground beef and ground pork. Mix well.
Roll the mixture into meatballs.
Preheat the air fryer to 375 for 5 minutes. Add in the meatballs, spray with cooking spray and cook for 6 minutes. Flip and cook for another 6 minutes. Remove from the air fryer.
In a large frying pan, add in the barbecue sauce and 3 tbsps water. Heat through and then add in the meatballs. Cover and allow to simmer on low for a few minutes to allow the flavors to meld. Remove the lid, turn the heat to medium and cook for another minute for the sauce the thicken slightly and coat the meatballs. Serve and enjoy!
