Baked Swedish Meatballs With Strawberry Jam

This is a Baked Swedish Meatballs recipe that uses Panko crumbs and served with homemade Strawberry Jam and homemade Gravy spooned on top.


I usually like frying meatballs with light oil because it tastes better. But when you are trying to multitask, baking them in the oven is a much easier solution. Not to mention, it is healthier to bake your meatballs instead of frying them with oil. These meatballs are so tender and flavorful, you will absolutely love them!


You can buy the meatballs store bought or make them yourself. I provided a Swedish Meatballs recipe but a ton of time, you can buy the Swedish meatballs already made. Doing this will help you skip having to put the ingredients together, but will require you still to bake them. It is much easier to make the gravy and the jam while the meatballs are in the oven. When you add everything together, it is absolutely delicious!

Instructions:

Preheat the oven to 400°F.


Make the meatballs. In a large bowl, combine the pork, beef, panko crumbs, eggs, parsley, garlic, salt and pepper. Using a small cookie scoop or spoon, form the mixture into meatballs about 1 inch in diameter and transfer baking sheet lined with parchment paper. Bake in the oven until cooked through, about 20-24 minutes. 


Make the Jam. In a small saucepan, combine the strawberries, brown sugar, lemon juice, and salt. Bring to a simmer over medium heat and cook until the berries begin to break down and soften, about 5 minutes. With a wooden spoon, begin to mash and simmer. You may have to lower the heat to medium low if the simmer is too intense. Remove from heat and cover until you’re ready to serve. 


Make the gravy. Add the butter to the same pan and heat over medium-high heat until melted. Whisk in the flour and cook until browned, about 30 seconds. Whisk in the stock and cream and bring to a boil. Add the soy sauce, mustard, salt and pepper. Let cook until reduced slightly, about 5-6 minutes. Reduce the heat to low simmer (medium low) and add the meatballs into the gravy. Cover and cook for another 2-3 minutes.


Serve. Serve the meatballs with gravy spooned over the top as well as the strawberry jam on the side or on top. Garnish with chopped dill.

Meatballs:
  • 2 pounds ground beef
  • 1 pound ground pork

Strawberry Jam:
  • 2 cups sliced strawberries
  • ¼ cup light brown sugar
  • 1 ½ tablespoons lemon juice
  • 1 teaspoon fine salt
Gravy:
  • 3 tablespoons salted butter
  • 3 tablespoons all-purpose flour
  • 2 cups beef stock
  • 1/3 cup heavy whipping cream
  • 1 tablespoon light soy sauce
  • 1 teaspoon honey mustard
  • 1 teaspoon black pepper
  • Salt, to taste
Garnish:
  • Chopped dill

Tips
  • Make sure to lower the heat if the simmer is too intense for the gravy.

    Easier to use bottle of cocktail sauce, can of tomato sauce and 4oz of grape jelly. Combine and heat to bubbling. Add 2 T dried parsley and basil. Pour over baked meatballs, simmer until hot. Need toothpicks and Ritz crackers.

  • Reminds me of the Ikea meatballs with lingonberry sauce. Going to make for my bubble buddies and co workers. Like your quick jam recipe. I love dill and a little goes a long way. Have my shopping list ready! Thanks for sharing!
