I’m all about easy meals these days. Something that’s quick to prep, simple to cook but definitely doesn’t compromise on flavour!


This skillet lasagna features all the flavours you know and love in the classic lasagna dish but the kicker? Made on your stovetop in one pan! Less dishes? Yahoo!


The dish starts off with a jazzed up jarred tomato sauce, layers of tender noodles and topped with creamy ricotta and mozzarella. YUM.


Serve it up with some crusty garlic bread and side salad for a delicious meal.PS - it makes enough for leftovers (and honestly tastes better the next day 😜). Hope you enjoy!

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup mushrooms, diced
  • 3 cloves garlic, minced
  • 3 Tbsp tomato paste
  • 1 - 650 mL jar favourite pasta sauce
  • 2 3/4 cup water
  • 6 oven ready lasagna noodles
  • 1 - 500 gram container Ricotta cheese
  • 1 tsp each; pepper, dried basil, dried oregano, garlic powder and onion powder
  • 2 cups mozzarella cheese
Instructions

In a large frying pan, brown ground beef along with onion, peppers and mushrooms over medium high heat. Cook until beef is cooked through and vegetables are tender, about 8-10 minutes. Drain off fat and return to pan.
Add in garlic cloves and tomato paste. Cook for an additional 3-4 minutes.
Lower heat to medium and stir in pasta sauce and water.
Next add in the noodles. I like to break them into bite sized pieces. Gently submerge noodles into the sauce and spoon sauce over top of each one to ensure they are covered. Cover the pan and cook until noodles are tender, about 15-20 minutes.
While the noodles cook, combine ricotta with all the seasonings. Mix together until combined.
Once noodles are tender, turn heat to low. Place spoonfuls of the ricotta mixture on top of the sauce and noodles. Place lid back on top and allow to melt slightly, about 3-4 minutes.
Finally top with mozzarella cheese and allow to melt. Serve it hot and enjoy!
Tips
  • Keep an eye on your noodles as they cook! Each oven is different so adjust the cook time accordingly. You can also add a touch more water to ensure they cook through.
