This sweet potato taco bake is one of my new favorite meals to make. Not only is it super easy and pretty healthy, it is also delicious. I like that it does not require many ingredients and they are ingredients that I usually have on hand, which makes it an easy go to supper when I am not sure what to make. It is a satisfying, well balanced meal that makes great leftovers, making it a great option for meal prep as well. Customize it how you want with your favorite toppings that you would use on tacos, such as salsa, sour cream, cilantro, lettuce, etc.

Ingredients

  • 3 cups chopped sweet potatoes
  • 1 Tbsp olive oil
  • 1 Tbsp garlic powder
  • 1 tsp paprika
  • salt & pepper to taste
  • 1 lb ground beef
  • 1 packet of taco seasoning
  • 1 cup corn
  • 1 can black beans
  • 1/2 cup cheddar cheese
  • Taco toppings of choice
Instructions

Preheat oven to 350°.
Season diced sweet potatoes with olive oil, garlic powder, paprika, salt & pepper.
Roast in oven for about 20 minutes.
While the sweet potatoes are roasting, in a skillet over medium heat, brown the hamburger.
Add the taco seasoning according to directions on the packet.
Once the sweet potatoes and taco meat are done, mix together with corn, black beans, and cheese and place in a greased casserole dish.
Bake for 10 minutes or until cheese is melted.
Serve with salsa, sour cream, cilantro, or whatever toppings you’d like.
