- 2 small onions, diced
- 1/2 lb bacon, chopped in small pieces
- 1 t. salt
- 1 T. rice wine vinegar
- 1/3 cup brown sugar
- 1/2 cup water
- Heat a rimmed skillet to medium heat and spray with cooking spray.
- Dice the onions and add them and the salt to the warm pan. Start to saute letting them get translucent about 10 minutes.
- After they are cooked, add in the chopped bacon and continue to cook until the bacon is just slightly crispy, usually another 10 minutes.
- Once the onions and bacon are cooked add in the remaining ingredients - rice wine vinegar, brown sugar and water. Bring this up to a boil. Once boiling, then bring back down to a simmer. Continue to stir the bacon jam until it reduces down and looks a bit syrupy. If looking dry, feel free to add additional water or brown sugar. This can take up to another 30 minutes to reduce.
- Set aside or keep on warm until the burgers are ready. Leftover jam can stay in the fridge for up to 4 weeks.
- 1 cup frozen or fresh corn
- 1 tomato, finely chopped
- 1/2 cup feta cheese
- 1 T rice wine vinegar
- 1/4 t garlic salt
- 1/2 t salt
- 1/2 t pepper
- In a bowl combine all of the corn relish ingredients and stir. Cover and refrigerate until ready to serve. This relish will stay fresh for 2-3 days in the fridge.
- 1 lb ground beef
- 3 T worcestershire sauce
- 1/8 cup steak sauce (A-1 or Heinz 57 works well)
- In a bowl gently combine the ground beef, worcestershire sauce and steak sauce. Form into four patties, place them on a plate and place them in the freezer for 1 hour to firm up before grilling.
- About 15 minutes before grilling remove them from the freezer and set out at room temperature.
- Heat your grill to medium/high heat (around 400 degrees). Place the burgers on the grill and cook for 10 minutes. Flip the burgers, top with some of the bacon jam and cook an additional 10 minutes on the other side.
- Remove the burgers from the grill. Immediately place on a bun and top with the fresh corn relish.
- Feel free to add any additional condiments or toppings you enjoy on your burger. Serve warm.
