Bourbon Bacon Bites
I know this is an unpopular opinion but I really don’t like bacon, I don’t hate it and will definitely enjoy a BLT every now and then but it’s just not a favorite food of mine. That being said, I do really enjoy this recipe, could be the bourbon, or the kick of the red pepper, whatever it is, I enjoy this and so does everyone else that tries it!
Making this takes a little time and patience and don’t skimp on the red pepper it really balances perfect with the other ingredients to make a truly unique appetizer!
You’ll need a 24 oz package of thick cut bacon, not regular bacon, it needs to be thick cut for this recipe
I like to use a throw away tin for this as the coating gets sticky after baking so I find it easier to just make it in one of these and just throw it away when you’re done. I also make rows of tin foil for the bacon to cook on, again so I can just throw it away but you can also use a baking rack if you prefer.
Preheat your oven to 350 and cut the slab of bacon into one inch chunks
Then make the sauce, place 1 cup of brown sugar in a bowl
Add 1/4 cup bourbon of your choice, this is what I had on hand
One tsp vanilla extract and 1 tsp of crushed red pepper (I add a little more than 1 tsp)
mix the sauce and add all the bacon in
Make sure every piece is coated with the sauce
Place pieces of bacon on the foil or rack, brush them all with the remaining bourbon mixture and cook for 40-60 minutes until crisp, brush v
bacon again half way through cooking time
Place bacon on a cooling rack, it will still be pliable when hot but it will get crisp and harder as it cools.
