Red Onion Pickles

A great way to use a lot of onions at once (if you perhaps have leftovers) or to make a pickle perfect to your palette, is pickling your own onions!


These pickled onions are perfect in hamburgers, hotdogs, salads, grilled meats, and more.

It is often ideal to pair with foods where you need to cut through richness to create balance, or in situations where there is the need for bright tanginess. The pickled onions last for about 1-2 weeks in the fridge.

If need be, you can completely substitute the red onions for yellow onions or even silver onions.

Ingredients

  • 2 medium-sized (about 300grams) red onions
  • ½ cup granulated sugar
  • ¼ cup white vinegar
  • ½ cup water
  • 10 pcs of whole black peppercorns
Instructions

Peel, wash, and slice the onions into thin slices.
Boil sugar, vinegar, water, and black peppercorns in a saucepan over medium heat. Once the sugar has dissolved, remove and let it cool down.
Place the sliced onion in the jar and pour in the vinegar mix. Close it tight and turn occasionally. The pickles are ready to be eaten after 3-4 days.
