How to make a low sugar apple cider jelly recipe. This is made with apple cider and has spices added for a rich fall flavor.
This starts with apple cider and has spices added, so it has a rich fall flavor. It's great on toast or on ice cream. I also add it to yogurt or oatmeal.
This is a low sugar jelly recipe, so you have to use low sugar pectin. If you use regular pectin it will not set up. If you have problems with it setting up, I have some tips on my spiced apple cider jelly recipe post.
I canned my apple cider jelly, but you can also freeze it. It lasts for about a year canned. Once you open it, use it within a month.

Ingredients
- 6 cups apple cider
- 1 box low sugar pectin
- 4 cups sugar
- 5 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/2 tsp ground cloves, optional
Instructions
- Place the apple cider and spices in a large pan. Heat over medium heat until it starts to bubble. Then reduce heat and let simmer for at least 5 minutes.
- In a separate bowl, combine 1/4 cup sugar and the low sugar pectin. Add to the apple cider. You can add a teaspoon of butter to reduce foaming.
- Cook over high heat and bring the apple cider jelly mixture to a full boil that can't be stirred down. Stir constantly. Add the rest of the sugar and bring to a boil again for 1 minute. Stir constantly. Remove from heat and skim off foam.
- Ladle into prepared jars with a 1/4 inch headspace. Wipe the jar ips and place lids and bands on jars. Process in a water bath for 5 minutes. Remove jars and place on a towel to cool completely.
- Let sit for 24 hours before moving or touching. It can take 2 or more days to completely jel.
