Pumpkin Butter

This easy pumpkin butter is a crockpot recipe! It makes a unique jelly/ jam- like spread for toast, biscuits, or scones. It is similar to Apple Butter. I wanted to recreate some that I bought, so I looked at the ingredients and tried it. I hope you like it!
As it cooks, the ingredients thicken and darken a bit.
It tastes really good on pumpkin bread, or zucchini bread-- or anything, really!
I have even put it on brownies and ice cream! You could also mix it into vanilla ice cream for instant pumpkin ice cream. Mmmm.

Ingredients
- 1 c. pumpkin puree
- 1 TBSLP apple cider vinegar
- 2 TBLSP orange juice or apple juice
- 1/2 tsp. pumpkin pie spice
- 3 TBLSP brown sugar
- 1/8 tsp. salt
- 1/4 tsp. cinnamon
Instructions
- Combine all ingredients in miniature crockpot. Cook on low for 1-2 hours, until pumpkin butter has darkened and thickened. Stir occasionally.
- Serve on pumpkin bread, or on toast, biscuits, or scones.
