Take a journey to Tuscany with this simple and delicious grilled cheese variation! Mozzarella, pesto and sun-dried tomatoes! Ready?! Let’s do this!🍅 🥖

Take make this quick, use a jar of prepared pesto sauce.

I cut slices of mozzarella or you can use already shredded mozzarella. Provolone would be a great substitute as well!

I sliced about 4 sundried tomatoes and placed them on top of the other slice of bread.

I sprayed the bread with cooking spray and sprinkled it with garlic powder for added flavor 🧄

Ingredients


  • Crusty bread from a boule (try my Tuscan herb inspired dutch oven bread)
  • 2 oz. Mozzarella
  • 2 tsp. Prepared basil pesto
  • 4 sundried tomatoes, sliced
  • Cooking spray

Instructions


Cut two slices of crusty bread or use any sliced bread you have handy. Spread each slice with 1 tsp. prepared pesto per slice, add slices of mozzarella or shredded mozzarella and then add the sliced sundried tomatoes. Place the second slice of bread on top.
Heat a medium size saucepan to medium heat and spray with cooking spray. Place the sandwich on the medium saucepan. Now spray the bread with additional cooking spray and then sprinkle garlic powder on top for added flavor. Let the sandwich cook until golden brown on one side then flip over and sprinkle with garlic powder. Cook the sandwich until the cheese has melted. It will take about 4 minutes per side to fully cook and get that golden brown crust. Slice the sandwich in half with a serrated knife and enjoy! I hope you enjoyed this recipe!
