Nothing screams southern more than tomato pie! Never heard of it? Well, it is a savory and comforting side dish made with tomatoes, basil, and a indulgent mayonnaise cheese mixture poured into a pie crust and baked. It is a creative way to use all of those juicy tomatoes from the garden in the summer, but can be enjoyed all year round.


The traditional tomato pie is made with mayonnaise, which can be packed with calories from saturated fat. This lightened up version is made by substituting half of the mayonnaise with Greek yogurt to lower the fat and calorie content. The best part is, nobody will ever know the difference.

Ingredients

  • 1 frozen pie crust, baked according to package directions
  • 3 large tomatoes, sliced
  • 10 basil leaves, chopped
  • 1/2 cup light mayonnaise
  • 1/2 cup plain, Non-Fat Greek yogurt
  • 1 cup shredded cheddar cheese
  • salt, pepper, onion, garlic powder to taste
Instructions

Place sliced tomatoes in colander and sprinkle with salt. Allow to drain for 10-20 minutes. Pat dry.
Preheat oven to 350 degrees F.
In a small bowl, mix mayonnaise, Greek yogurt, and cheese together.
Spread a layer of tomatoes on pre-baked pie crust and sprinkle with salt, pepper, onion powder, and chopped basil.
Repeat layers twice.
Cover with Greek yogurt, mayonnaise and cheese mixture.
Bake for 30 minutes. Allow to sit for about 10 minutes before slicing.
Tips
  • Make sure you get as much liquid out of the tomatoes as possible to prevent a soggy pie.
