Ingredients

  • 1 block firm tofu, cut into cubes
  • 1 can full fat coconut milk
  • 1 white onion
  • 1 tbsp coconut oil 
  • 2-3 cloves of garlic
  • 1 tbsp tandoori masala
  • 1 tbsp chilli pepper (adjust to your liking)
  • 1 tbsp salt
  • Pepper
  • 1 cup sliced mushrooms
Instructions

Begin by dicing up the onion. Place a pan on medium heat with coconut oil and begin frying the onion.
In the meantime, mince the garlic and add to the onion mixture after about 5 minutes.
Add in all the spices listed above and sauce for another 5-10 minutes or until onions and garlic have browned.
Add in the coconut milk and let the mixture simmer for another 10 minutes.
Simultaneously, air fry the tofu at 400F for about 10-15 minutes.
Once tofu is cooked, added to our curry mixture.
Adjust spices to your liking and enjoy with a side of rice or naan!
