Begin by sautéing diced white onion and minced garlic in fragrant coconut oil until they're golden brown, releasing their savory essence. Then, add cubes of firm tofu to the mix, allowing them to absorb the rich flavors of the curry base. Sprinkle in a tantalizing blend of tandoori masala and chili pepper, adjusting the heat to your preference, while seasoning with a generous pinch of salt and pepper to enhance the dish's depth. Pour in velvety full-fat coconut milk, infusing the curry with luxurious creaminess that harmonizes perfectly with the spices. To add a textural contrast, toss in sliced mushrooms, letting them soak up the savory goodness. Simmer gently until the flavors meld together, creating a sumptuous curry that's both comforting and exotic. Serve over steamed rice or with warm naan, and prepare to be transported to culinary bliss with each spoonful.
