Chole, Chickpeas cooked in delicious,tangy and spicy tomato based gravy is the most popular Indian curry. Usually it is served with deep fried breads called bhatura, naan or rice.


If you love flavorful Indian food then this vegan dish is worth a try.

Chana masala is a popular Indian curry originated in Northern Parts of India. Chana or Chole means Chickpeas or Garbanzo Beans. There are different ways to make this curry. Here is a simple method of how I prepare this at home.

Here I have soaked the chickpeas overnight.To skip the soaking process, bring 6 cups of water to a rolling boil and add the chickpeas to it. Cover and rest them for about an hour or so. You can also use canned ones available at any grocery store.

Here the base of gravy is onion ,garlic and tomato paste. To quickly fix this you can also use store bought marinara sauce or any other sauce with onion,garlic tomato and basil ingredients.


Either you can cook the chickpeas separately in a pressure cooker or instant pot and add to the cooked gravy . or you can simply cook all together in a single pot like I did.

Ingredients
For The Chole
  • 1 Cup Chickpeas (Chole)
  • 1 Small Onion
  • 1 Tbsp Grated Garlic
  • 1/2 Inch Ginger Grated
  • 2 Green Chilies
  • 2 Medium Tomatoes
  • 2 Tbsp Oil
  • Handful of Chopped Cilantro Leaves
Whole Spices
  • 1 Tsp Whole Cumin Seeds(Jeera)
  • 1/2 Inch Cinnamon Stick
  • 1 Clove
  • 1 Cardamom
  • 1 Bay Leaf
Ground Spices
  • 1 Tsp Turmeric Powder
  • 2 Tsp Red Chilli Powder
  • 1 Tsp Garam Masala
  • 1 Tsp Kitchen King Masala
  • 1 Tbsp Cumin-Coriander Powder
  • 1 Tsp Dried Fenugreek Leaves( Kasuri Methi)
  • Salt To Taste
Instructions
For The Chole
First make a puree out of onion,garlic ginger ,tomatoes and green chilies. Keep the paste aside.
Then in a pressure Cooker/Instant Pot heat2 tbsp of oil.
Once the oil is hot add the whole spices to it and saute .
Then add the prepared gravy to it and cook for 2-3 minutes . until the raw smell of onion and garlic is gone.
Then add the ground spices and saute for another 2 minutes.
Then add the soaked chickpeas to it along with salt to taste.
Then pressure cook it for 7-8 whistles or Cook on manual mode for 7-8 minutes(Sealing Vent Mode) if you are using Instant pot.
Once there is no pressure left in the Instant pot/ Pressure Cooker , Open the lid and Serve it in a bowl.
Garnish with some chopped cilantro leaves and serve hot with some rice/naan.
