Easy Fruit Salad

I first made this fruit salad a few months ago for a get-together, and I just kind of created this “recipe” as I went along. My goal was to make an easy, colorful fruit salad. I knew I wanted to use cantaloupe and honeydew melons and red grapes, and I thought strawberries would add a nice pop of color.

Mandarin oranges sounded good too, and I used canned mandarins in light syrup, but I drained and rinsed them off because I wanted this salad to be naturally sweet. So the sweetness in this fruit salad comes from the last ingredient, the juice from the can of pineapple chunks that are also added in.

This is a large fruit salad and feeds about 10 people. You can always halve the amounts to make a smaller salad.

Ingredients

  • 6 cups bite-size chunks of cantaloupe or 1 melon
  • 6 cups bite-size chunks of honeydew, or 1 melon
  • 3 cups red seedless grapes
  • 2 1/2 cups strawberries, hulled and halved or quartered (about 16 ounces)
  • 1 (15-ounce) can Mandarin oranges, rinsed and drained
  • 1 (20-ounce) can pineapple chunks in 100% juice, drained, but SAVE the juice!
Instructions

In large bowl, add the cantaloupe and honeydew chunks, grapes, strawberries, Mandarin oranges, and pineapple chunks.
Toss fruit together to evenly distribute in the mixture.
Drizzle the remaining pineapple juice from the can over the fruit salad and toss again.
Serve immediately or refrigerate until ready to serve (toss fruit salad again just before serving).
