Here is an Easy Special Meal Idea

Are you looking for a new special meal to cook? This could be it. My husband does not generally care for sweet and meat together. He does not like pineapple with ham. But he likes this salmon. I usually do not like to make things with a lot of ingredients. But I usually have ALL of these ingredients already on hand, so I don’t mind! I make two kinds of baked salmon, and here is one of them.



BEFORE

I liked to buy salmon frozen at Sam’s Club, and then thaw out what I want to use. The fillets thaw out pretty quickly immersed in water. See the miniature 2 tablespoon size measuring cup* to the right with the brown sugar in it? It was a gift, and I love it! So many of the ingredients in this recipe call for one or two liquid tablespoons, and I measure them all in that little cup one at a time. It is so fast and easy.

Stir and combine everything except the salmon. Then pour it over the salmon in its baking dish. I used an 8×11 dish this time.

Since salmon cooks so quickly, you can make this ahead and store it in the refrigerator the same day that you are going to bake it. Let it sit out a little so the cold glass doesn’t go into the hot oven…I’ve never had a problem but you never know!


AFTER!!

I think mashed potatoes go well with this salmon. You don’t need gravy because you can just use the extra salmon sauce if you want more flavor in your mashed potatoes.

This salmon is also really good with a side of rice or quinoa. Add a vegetable and your meal is complete!

Ingredients

  • ½ c. honey
  • ¼ c. soy sauce
  • 2 T. brown sugar
  • 2 T. either pineapple, orange, or apple juice
  • 1 T. lemon juice
  • 1 T. apple cider (or white) vinegar
  • 1 t. olive oil
  • ¼-1/2 tsp. black pepper
  • ⅛-1/4 tsp cayenne pepper
  • ¼ t. paprika
  • ⅛ t. garlic powder
  • 3-5 salmon fillets (I use frozen and thaw them)
Instructions

Thaw salmon if using frozen.
Combine all ingredients except salmon, then pour over salmon in a baking dish.
Bake at 400 degrees for 15 minutes or until done.
Turn over and broil if desired for a few minutes at the end (I didn't this time).
Tips
  • This sweet recipe can also be a little spicy hot if you want it to be! Just adjust your amounts of pepper and cayenne pepper.
