For the bell pepper nachos:
- About 10 bell peppers
For the sauce:
- 150g or 5.3 ounces ground turkey
- 1 tablespoon extra virgin olive oil
- 1 cup passata or chopped tomatoes
- 1/2 onion, diced
- 50gr or 1/3 cup sweetcorn
- Seasoning: Cumin, smoked paprika, garlic powder, oregano, salt & pepper to taste
- 1 can red kidney beans
Extra toppings (optional):
- 2 tablespoons fat-free Greek yogurt
- 40g or 1/3 cup low-fat grated cheese
- Jalapeños
- Fresh coriander

Method
- Preheat oven to 180 degrees Celsius (350 F).
- Slice the bell peppers in half (remove seeds) or quarter them if larger. Arrange them in a single layer on a sheet pan.
- In a large pan over medium heat, brown the ground turkey with the oil. Add seasoning and mix well. Stir in passata or chopped tomatoes, cooking for an extra 10 minutes. Add sweetcorn and red kidney beans, stirring well to create the salsa.
- Spoon the salsa evenly onto the peppers, ensuring each one is covered. Sprinkle with shredded cheese.
- Bake peppers in the oven for about 15 minutes, until peppers are tender and cheese is melted.
- Top with optional toppings like fat-free yogurt, jalapeños, and coriander for added flavour.
