Puffed Quinoa Bars

Ingredients
- 1 cup puffed quinoa
- 1/4 cup @livafoods date syrup
- 1/4 cup pumpkin seeds
- 1/4 cup walnuts
- 1 heaping tablespoon of runny almond butter
- 1/2 cup dark chocolate chips
- 1 tbsp coconut oil
- Salt (to sprinkle on top)
Instructions
- Mix together the first 5 ingredients in a large bowl.
- Flatten out the mixture onto a baking tray to form the rectangular shape.
- Melt together the dark chocolate and coconut oil for 30 seconds in the microwave or until melted.
- Drizzle only 3/4 of this mixture on top (we will use the rest later). This will seep into the bar mixture and help firm up the bars.Â
- Set the tray in the freezer for 15 minutes.
- Drizzle the remaining chocolate on top and sprinkle with sea salt. Enjoy!
