Grilled Peach and Burrata Salad

Grilled peaches are one of life's greatest pleasures. I absolutely love the combination from the sweet peach flesh and the slight bitterness of charring from the grill, they are so delicious!


I've also added some honey here to bring out the natural sweetness of the peach. They are a perfect match for some creamy burrata. Burrata is similar to Mozzarella but has cream inside it, so it's really oozy and delicious. Buffalo Mozzarella, Feta or Halloumi would also be brilliant here. Served simply with rocket, crunchy almonds and a slight heat from the Turkish chilli flakes, this salad is a serious winner for any barbecue!

Ingredients

  • 3 ripe peaches
  • 1 tbsp honey
  • 1 ball of burrata
  • 100 g rocket or arugula
  • Handful of Toasted almonds, chopped
  • Sprinkling of Turkish chilli flakes (pul biber) or any mild chilli flake
Instructions

1. Slice the peaches into 6 segments, removing the stone. Heat a griddle pan to a moderate heat. Using a pastry brush, spread one side of the peach segments with the honey and add to the griddle pan. Spread the top side of the segments with the remaining honey. Cook for a couple of minutes until char marks appear, then turn over and cook for a minute or so.
2. Meanwhile, add the rocket to a large plate. Then layer up with the peach slices. Break the burrata ball into pieces and add to the dish. Finally sprinkle with the chopped almonds and chilli flakes and serve while still warm.
