Hello Foodie friends,


How are you enjoying the last weeks of summer? It is still very sunny here in Los Angeles and peach and heirloom tomatoes season, is at its peak. These are one of my favorite summer fruits along with strawberries.


I decided to create a really easy and tasty peach and burrata salad that you can enjoy as it is or over a rustic bread. This is the perfect appetizer salad, or the crunchy crostini to enjoy by the pool or bring to beach. The tangy and velvety dressing is delish and the mix of basil and mint, elevates this salad to the next level.


Here are the simple ingredients:

  • heirloom tomatoes
  • ripe peaches
  • burrata
  • basil
  • mint
  • dijon vinaigrette

First goes a layer of heirloom tomatoes and slices of peaches.

A nice layer of burrata.

Then add the fresh herbs like mint and bail along with micro greens for garnish.

Ingredients

  • 1 ripe peach in slices
  • 2 large heirloom tomatoes
  • 2 burrata balls
  • 5 leaves of mint
  • 5 leaves of basil
  • small handful of micro greens for garnish
  • 2 Tbsp of dijon vinaigrette
  • 1 tsp on dijon mustard
  • 1/4 tsp of garlic powder
  • salt and pepper to taste
  • 2 Tbsp of olive oil
  • 2 tbsp rose vinegar
Instructions

First prep the ingredients. Slice the peaches and tomatoes and cut the burrata into four.
In a large round platter, array the tomatoes first, then a layer of sliced peaches and add the burrata pieces. Now time for the garnish: hand chop the mint and basil and top off with micro greens.
In a jar, mix the olive oil, rose vinegar, dijon mustard, salt, pepper and garlic powder. You may add a touch of honey for nicer finish. Then drizzle a couple of spoonfuls of lemon honey vinaigrette.
Serve with crusty toasted bread.... and enjoy!
