If you find yourself wondering what to do with some cod fillets or few frozen squares of alaskan pollock, consider using this recipe to zhuzh up these blank canvases!


Apart from having to boil the potatoes, pretty much everything goes into the baking tray and can be served directly in it, making this a rather clutter-free recipe.


While I suggest a white, dense fish given that it serves great as a mellow vessel for the spices, you could use any fish of your preference, just keep in mind the amount of time in the oven not only varies depending on the size of the fish, but also the fat content.

Ingredients
For the fish
  • 3 cloves minced garlic
  • 2 shallots, thinly sliced
  • 1 tbsp minced parsley
  • 1 tbsp minced cilantro
  • 1 tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp ground paprika or chilli powder
  • ½ tsp ground tumeric
  • 1 tbsp white wine vinegar or apple cider vinegar
  • Juice of 1 lemon
  • 1 ½ tbsp tomato paste
  • Salt and ground black pepper for seasoning - adjust to taste
  • 1 tbsp capers
  • About 700 grams of fish fillets (4 fillets): I used cod fillets
  • 250 grams cherry tomatoes, halved
For the potatoes
  • 500 ml water
  • 400 grams potatoes, peeled, thinly sliced
  • 3 tbsp melted butter
  • Salt and ground black pepper for seasoning
Instructions
For the fish
Preheat the oven to 350°F or 176°C
In a deep plate or medium bowl (large enough to add the fish later) combine garlic, shallots, parsley, cilantro, cumin, coriander, paprika tumeric, vinegar, lemon juice, tomato paste, salt, pepper and capers.
Add the fish fillets and let it sit for about 30 minutes.
Leave the cherries tomatoes for later on the next step.
For the potatoes
In a saucepan boil some water (about 500ml) and cook the sliced potatoes for about 8-10 minutes until almost tender.
Remove from the heat, drain the water and season the potatoes with salt, pepper and add the melted butter and mixed it slowly using spatula.
In a baking dish, add the prepared potatoes, then placed the marinated fish slices on top. And spread the sliced tomatoes.
Bake in the oven for about 30 minutes until the fish cooked through.
