Sourdough Toast With Poached Egg and Avocado-Perfect Brunch for One
Brunch does not have to be really difficult. I will try to do too many items for brunch (two sweet, two savory, a fun drink also, maybe a fruit salad, too). It just gets too crazy to try to manage all of that. This definitely is not a "make-ahead" brunch, but if you stick to just one dish, it comes together quickly!
I had never poached an egg before making this. I can sometimes be hesitant to have a super-runny yolk. I need to have bread or something to "sop it up," because it can be too much. I find this recipe perfectly does that, and also adds a ton of different textures to contrast with the soft poached egg. The flavors also with bright pickles and spicy chili oil, creamy and smooth avocado..it's just fun! Give this one a try and let me know how you like it!

Ingredients
Poached egg toast
- 1 thick slice of sourdough or another hearty bread that you enjoy
- 1 large egg + 2 Tbsp vinegar for poaching
- 1/2 large avocado
- 1 tsp pepita seeds
- fresh basil leaves
- 2 tbsp plain hummus spread
- 1 Tbsp chili oil
- 2 radishes, pickled (optional)
- pomegranate seeds (optional, but highly encouraged)!
Instructions
Poached egg toast
- Toast your bread and set aside
- Get ready to poach your egg
- Bring a large pot of water to a boil and reduce to simmer
- While you wait for the boiling water (a watched pot...) you can crack the egg into a fine mesh sieve over a bowl. The idea is you are removing all of the liquid-y egg whites
- Place the egg in a small bowl
- While you are likely still waiting for that boiling water, spread your toast with hummus and slice the avocados for the top of that
- Add your fresh basil leaves and pickled radishes
- Now, the fun part! Stir the vinegar into your hot water and create a vortex by stirring rapidly.
- Now add the egg into the middle and cook for 3 minutes.
- You will start to see it solidifying!
- Remove the egg gently with a slotted spoon and place on top of toast right away
- Top with pipits, pomegranate arils, and a little chili paste if you would like
- ENJOY!
Tips
- If you don't like radishes, you could always quick-pickle red onion for the same effect!
