This recipe is an easy, make-ahead breakfast that you can enjoy every day of the week. Sweet potatoes and butternut squash are two great sources of vitamin A and fiber. Not only does vitamin A help with healthy eyesight but it also acts an immune defense. In these colder winter months we are more likely to catch a cold or other illness so we shouldn't overlook the power of our diet in helping prevent illnesses.


I love coming up with recipes that not only taste good but are good for you. There is no point in eating foods that you don't enjoy, so why not have both!

Ingredients
Harvest Hash
  • 2-3 diced sweet potatoes
  • 3 sprigs of thyme
  • 1/4 cup diced butternut squash
  • 2 tsp sage chopped
  • 1/2 onion diced
  • 4 eggs
  • 3 breakfast sausage links
  • 2 tbsp olive oil
  • (Optional) 1 tsp black garlic
Instructions
Harvest Hash
In a large sauce pan over medium-high heat, saute breakfast sausage links in 1 tbsp olive oil
Break apart sausage links into bite size pieces and cook for 2-3 minutes until slightly brown
Add 1 more tbsp olive oil and add the sweet potatoes, butternut squash, onion, sage, thyme, and a dash of salt and pepper
Cook mixture for 2-3 minutes until slightly softened mixing frequently to not burn the sausage
Once cooked, turn heat to low and make 4 wells in mixture
Add an egg in each well, cover with lid, and let egg cook for 3-4 minutes or until well cooked
(Optional) top with black garlic (as seen in photo)
Tips
  • Feel free to add different toppings such as avocado, cheese, etc
  • This recipe can be doubled and used as a meal prep breakfast
